Here is a take on Galbi which are Korean marinated grilled ribs. I used the cookbook Cook Korean by Robin Ha for the recipe and added my twist!
During my third year of college, I worked part-time as a server at a Korean restaurant, and this was a popular dish! It was expensive, so I only ordered it twice even with an employee discount.
Therefore, to save money I decided to make it at home which proved to be an amazing meal prep idea due to the marination time. I’ve left this marinated before for 4 days, taking out a few pieces as I wanted to fry for dinner or lunch.
Ingredients
- 2 pounds of beef short ribs
- 1/2 green apple or Asian pear
- 1 small-medium yellow onion
- 7 cloves garlic
- 2 tbsp ginger
- 1/2 cup sweet soy sauce
- 1 tbsp brown sugar
- 1 tbsp honey or granulated sugar
- Ground black pepper to taste
- 3 green onions (1-2 stalks)
Instructions
Marinade Preparation:
- Blend the peeled apple or Asian pear, yellow onion, garlic, and ginger until smooth.
- Pour the blended mixture into a bowl or container to marinate the short ribs.
- Add dark soy sauce, brown sugar, honey (or granulated sugar), and ground black pepper.
- Slice the green onions and add them to the marinade.
- Marinating the Beef:
- Layer the beef short ribs in the marinade, ensuring they are well coated.
- Cover the container with a lid or plastic wrap and refrigerate for 2-4 hours, or overnight for the best flavor.
- Grilling:
- ◦ Grill the marinated short ribs to your desired level of doneness.
- ◦ Enjoy with lettuce and a dipping sauce of your choice, or use the short ribs in a rice burger (recipe below).
It is best to marinate the meat for 6-8 hours (overnight for best results)! However, if you must rush, 2-3 hours will suffice 🙂
