My Breakup Diet: Cheez-Its
Breakups are tough—and for two months, my diet consisted almost entirely of Cheez-Its. Anxiety had me skipping real meals, but a box of those cheesy crackers? That was my breakfast, lunch, and dinner. While they brought me temporary comfort, they also left me with stomach issues and a Candida diagnosis. That’s when I decided to turn heartbreak into a healthier habit.
These homemade sourdough cheddar crackers are my alternative—just as cheesy and delicious, but easier on my stomach and packed with probiotics. They’re the snack I needed back then and the snack I swear by now. Let me show you how I make them!
Ingredients
- 2 tablespoons butter
- 3/4 cup all-purpose flour
- 1 cup sourdough discard
- 1 cup shredded sharp cheddar cheese (or your favorite cheese)
- Kosher salt (for sprinkling)
- Optional seasonings: Trader Joe’s Elote or ranch seasoning (or any spice mix you love)
Instructions
Prepare the Dough
In a mixing bowl, combine the butter, sourdough discard, and shredded cheddar cheese. Add the flour and mix until the dough comes together. It should be soft but not sticky.
Roll It Out
On a floured surface, roll the dough thinly (about 1/8 inch thick). The thinner the dough, the crispier the crackers!
Cut Into Shapes
Use a knife, pizza cutter, or cookie cutter to cut the dough into small squares or your preferred shapes. Transfer them to a parchment-lined baking sheet.
Season the Crackers
Lightly sprinkle the crackers with kosher salt and your chosen seasoning (Elote or ranch work great).
Bake to Perfection
Preheat the oven to 350°F (175°C) and bake the crackers for 15-20 minutes, or until they turn golden and crispy. Keep an eye on them towards the end to avoid over-baking.
Cool and Enjoy
Let the crackers cool completely before snacking. They’ll crisp up even more as they cool
